Southwestern Frittata

 

3 QUART DISH

11 oz. (7+4) Ortega canned whole green chiles

1 pound Cheddar cheese, grated

1 pound Monterey Jack cheese, grated

3 eggs

8 oz. Evaporated milk

1 Tablespoon flour

7oz. can Enchilada Sauce & 7 oz Tomato Sauce

 

Grease large glass baking dish.  Start with a layer of half the cheddar and half the jack cheese.  Wash and dry canned chiles and remove seeds.  Spread half of them over the cheese.  Add a layer of rest of cheese and then rest of chiles.  Pack solid, covering from edge to edge.  Beat eggs.  Add milk and flour to eggs and mix well.  Pour milk mixture over chiles and cheeses.  Bake at 350 degrees for 30 minutes, uncovered.  Pour tomato & Enchilada sauce over entire surface and return to oven for 15 minutes longer.
